Who takes our classes?

Sausage classes are perfect for families/friends, date night's, anniversaries, hunters, cooking enthusiasts (young and old), foodies, bachelor/-ette parties, corporate team building exercises, company holiday parties, and birthday parties. We are happy to accommodate special requests and can travel to your location.   

What do you learn?

In each two-hour class, up to 20-25 students learn from sausage expert Mike ‘Woj’ Wojcik how to make gourmet, preservative-free sausages. 


What to expect?


Class starts with information about:

  • Food safety/sanitation/cooking procedures.
  • Sourcing ingredients and equipment. 
  • Basic guidelines to grind, spice, and case sausages.
  • Do’s and Don’ts, tips from the pro’s, and top-secret recipes!  

Then we roll up our sleeves and start making pounds of delicious sausages!

  • You will learn how to stuff the sausage casings and create the perfect looking links.

  

As a reward for wrangling meat and casings, each person takes home 2 sample packs of sausage links to toss on the grill or freeze for later.  

*Typically all classes make both Brats & Italian sausages. 


Upon completion of the class, samples of the days ‘haul’ will be cooked up and served to guests.  Tasty! 

Your Sausage Guru

Mike Wojcik is the former owner of Westminster Hot Dog, a gourmet sausage restaurant in Chicago's Loop.  Since a young lad he has trained in the art of encasing delicious meats.  Carrying on the tradition of his Polish and German heritage, he shares with you his knowledge and 100+ year old recipes.
